Mr.Awesome Boyfriend and I went hiking at Pleasanton foothills again! It was the perfect day for hiking too: the sky was overcast, the temp was just cool enough and the sun would be out a little longer. On our way back, we decided to take a different path. I am so glad we did because we got some amazing pics.

I didn’t like BBQ until I had Kinder’s. I got the famous ball tip with everything and some delicious macaroni salad. My forever favorite lunch place can be found in Pleasanton off of hopyard.

Oh Bagels!

Boyfriend and I had the best bagels for breakfast.  We went to Noah’s Bagels in pleasanton, next to the old Safeway.  I had a delicious sourdough bagel with tomato and basil cream cheese. Boyfriend had a blueberry bagel with blueberry cream cheese. Yum!

Breakfast is the most important meal of the day… 🙂

Hello Again!

My blog world, I am so sorry for not keeping up to date on my posts. I have been a busy little bee. School is going great! I received two more A’s for my Principle’s of Management and Business Law I. 😀 I am in my second week of Marketing and Programming and doing fabulous.

At my little Safeway, I am training to become the Starbucks Assistant Manager. 😀 I am super excited and egger to learn more. I am also in pursuit of getting my coffee master black apron. Yup! I am not making that up, Starbucks has an official coffee master apron. I am hoping to get my co-worker on board, so we can get them at the same time.

My new years resolution to “get fit” is still on target. I had a week off for recovery and healing. I am getting close to my goal weight and should reach it by next month; just in time for spring/summer!

I also am thinking about adding some new elements to my blog. I have a wonderful new phone with immense capabilities. I am thinking about creating a “short” post, where I will post a small ball of information. Kind of like Facebook’s “what’s on your mind”. My goal is to make a short post every other day. Also, my phone has an amazing camera and I think I might be able to post short videos. 🙂

Tail As Old As Time…

One of my absolute favorite movies has now gone 3D. Disney’s Beauty and the Beast is a wonderful animated movie that encases love, wit, and action. The voices, story plot and songs are still the same as the original 1991 film. However, the animation is better than ever and really brings the story to life! I would recommend this movie to everyone! In the words of Monsieur Lumiere, “Be Our Guest!” and enjoy the movie.

Another really good movie that recently came out, in Blue Ray, is Disney’s the Lion King. Again, the story and songs have not changed but the animation is beautiful! The colors are bold and brilliant. Who could forget the Hakuna Matata song?! 😀 Also, if anyone gets to see The Lion King the musical, it will change your life! It is one of the best musicals I have ever seen performed!

My Name is Girl in Pigtails… and I am a Nerd.

Oh yeah! And ‘Yes’… it is a blank keyboard. So, this brings me into a few topics for this post: 1- the awesome keyboard. 2- the awesome keyboard user. ;-D

Topic 1

I took my ordinary DELL keyboard (black and all) and gave it to Mr. Awesome Boyfriend. He cleaned it up a bit (it was kind of dusty). Then, took the whole thing apart. He put all the keys on cardboard in the correct pattern and placement. Next, he took me to Wal-Mart and asked me to pick out my paint colors. It reminds me of Legos with a royal color scheme. Krylon fusion paint is the brand boyfriend decided to go with; he said it was great for plastic and whatnot. It took 6 days to dry but it was worth it! I have to toot his horn for him (he deserves it)… toot toot!

Topic 2

Boyfriend and I decided we wanted to both improve our typing. The two finger typing worked fine for high school but in the business world there are mountains of things to type. We are using an online program located at www.typingweb.com. They provide a free service that teaches you how to correctly type through lessons, tests, and games. If you do a lesson or two a day, for a week, your typing is going to improve dramatically. In no time at all, you too can rock the blank keyboard and be the envy of all who see.

Dessert Nachos!

I have creatively made a healthy rendition of nachos called apple nachos!

It is super easy, delicious, and filling; great words for people who are dieting.

What you need:

1 apple (I really like Fuji apples or red delicious)

1 banana (thank you Gwen Stefani! I can spell this correctly)

1 serving of PB chunky or smooth 😀 (I like Open Nature Safeway brand)

1 serving of raisins (You can’t go wrong with California Raisins!)

What to do:

Step 1: Cut apple into slices and place on a plate.

Step 2: Cut banana into rounds and put on the apples.

Step 3: Put the PB in the microwave for a few seconds until runny. My brand comes in a glass jar, so I stick the whole jar in the microwave.

Step 4: Drizzle PB on the fruit.

Step 5: Top off with raisins and enjoy!

I LOVE My Nachos!

Yup, I said it… I love my nachos. I thought I would be nacho-less when we started our new years resolution to get fit! But on the contrary, I have found a way! The first step to healthy nachos is, make every part of the nacho concoction; homemade as much as possible. I don’t mean beans from a can, cheese from a jar and guacamole from a bag. With just a little bit of time and a pinch of effort you too can make homemade nachos greatness.

So let’s begin with the refried beans.

What you need:

2 1/2 cups of DRY pinto beans (I used Safeway brand)

3 quarts of water (yup just water)

1/2 cup of chopped onion

2 Tbsp O-Organic olive oil

Salt to taste

How to make it:

Step 1: Rinse the beans in water to remove any dirt or bad beans. I just threw them in a big bowl and ran water over them from my tap.

Step 2: Put beans into a pot and cover with the 3 quarts of water.

Step 3: Bring to a boil on high heat.

Step 4: Lower heat to a low-medium or at a simmer for about 1 1/2 – 2 hours.

* (The beans are done when the beans are soft and the skin is just beginning to beak.)

Step 5: Dump the bean water into a big bowl.

Step 6: Put beans back in the pot and add onions and oil.

Step 7: Let cook on low heat until onions are translucent.

Step 8: Mash the beans with any tool found fit. (I had to use the bottom of a glass measuring cup but a potato masher is suppose to be glorious).

Step 9: Add about a half a cup to a full cup of the bean boil water.

Step 10: Let cook down to desired thickness and add salt to taste.

Recommendations: Use O-Organic beef broth instead of water. Also, if eating just the beans, I like mixing some shredded low fat cheese.

Now for the guacamole!

What you need:

1 Large avocado (skin off and diced chunky)

3 slices (diced) of a fresh medium size tomatoes

3 little green onions (diced)

1/4 cup cilantro (diced but optional)

Salt to taste

How to make it:

Step 1: Combine all ingredients into a bowl.

Step 2: Stir and mash with a fork to desired chunkiness.

I usually will make this first and stick it in the frig so it is cold when the meal is ready; but that is just me!

And now the meat!

Basically cook your desired ground meat in a small pot. Drain the grease and season with a Mexican seasoning. I used McCormick Hot Taco Seasoning packet (one packet per pound of meat).

Finally! The Nachos…

Step 1: Start with preheating the oven to 300º F.

Step 2: Layer a serving of white corn restaurant style chips on a plate. I used Safeway Snack Artisan chips and the serving amount was 10 chips. Not too bad!

Step 3: Add a serving of shredded non-fat cheese and put the plate in the over; until the cheese has almost melted.

Step 4: Add a small spoonful or 1/2 cup of beans on the chips.

Step 5: Put a small spoonful or 3 oz of the Mexican flavored meat on the beans.

Step 6: Add half of the guacamole mix on top of the meat.

Step 7: Top it off with a portion of fat free sour cream.

Step 8: Eat and Enjoy… Deliciousness! 😀 The biggest thing I have learned about dieting is portion control and accurate measurements of the portions.

Be My Valentine?

February is right around the corner and that means Valentines day is coming up! Safeway has got you covered! A dozen long stem roses are on sale for $9.99 with your Safeway Club Card. I decided to talk to my flouriest about picking out a bunch just for the house. Mr.Victor helped me pick out a fresh bouquet of peach roses. I don’t have a green thumb, what so ever, so I asked for any tricks that would help my rose not die in two days! 😀 He said to use the rose food that comes with the purchase and to keep the water clean, add a small DROP of bleach. By golly it worked! My roses have lasted a week and a half and are gorgeous!

Hello Fitness World!

I have much to tell you! So let’s start with the exercise. Week two is coming to a close and let me just say that it was easier than week one. I have also started noticing some changes. I have lost a little bit of weight and have started to notice muscles that I haven’t seen in years (h-e-l-l-o abs)!

Now, let me first share my Day one (round 1) P90X, I weighed in at 130lbs and was at 24% body fat (the heaviest of my life!).  On Day 30 of P90X, I weighed in at 131lbs (I was building muscle) and got down to 21% body fat! Day 90, I weighed in at 127lbs and was at 18.5% body fat. It was hard but I was very happy with my results! Then, the holidays came and did its damage. Now, I am back on the get fit train and I am super pumped!

Last week, I weighed in at 122lbs and went down to 119lbs, pretty good for one week of diet and exercise. I am at 18% body fat!The dieting has been tolerable and the calorie app sure does keep me on my toes. I usually don’t eat breakfast but for lunch I either eat a 1/2 tuna sandwich or 1/2 egg salad sandwich. This might not sound like a lot but when you start to eat the proper serving size 1/2 a sandwich is huge! Ok, maybe not huge but it is enough and with a side of apples or oranges- it is a nice lunch.

I usually will have a few snacks throughout the day. I really like snacks and anything that is a 100 calorie snack pack is a must! I recommend the 100 calorie Orville Redenbacher’s Gourmet Popping Corn. I also like the Nabisco 100 cal Sweet and Salty mix Kettle Flavor. I love the 100 Calorie Right Bites Fudge Shoppe mini fudge stripes from Keebler. Who says dieting has to taste like cardboard; just as long as it is in moderation. ;-D

For dinner, the fast food option has completely disappeared. They are not very calorie friendly or healthy. We plan out dinners every week and use the correct portions on everything. This has made our food bill drop a little because we pick meals that last at least two to three days. No… it is not chicken salad everyday or only a cup of soup. The last two weeks, we had shrimp fettuccini in a garlic olive oil sauce, Grilled chicken alfredo, Salisbury Steak and homemade potato salad- you know all the healthy stuff. Again, the most important concept in dieting is portion control and healthy choices.

Exercising has taken a turn for the better… We got bicycles! We ended up getting them for free with Mr.Awesome boyfriend’s travel points. They are both made by Jeep. One bike is the Renegade Men’s Duel Suspension Mountain Bike and the Jeep Cherokee Men’s Duel Suspension Mountain Bike. Once we put them together and buy a few essentials (like a bike pump and helmets); we are ready to ride… and burn 300+ calories per hour. Yahoo!

I will keep you posted on my new year’s resolution to get fit!
