Chicken Taco Pizza!

Yes, I said it: chicken taco pizza but it’s not what you think! Unless, you are thinking about Taco Bell’s Mexican pizza; then you read my mind! There are eight ingredients:flour tortillas, shredded cheese, chicken breast, taco seasoning, sour cream, cooking spray, refried beans and hot sauce.

Ok, to make this simple dish: turn your George Forman grill to 400 F and your oven to 425 F. While these are heating up, season your chicken breast. In a small sauce pan, heat up the refried beans. Once your grill is ready, cook your chicken for the appropriate amount of time. My one little chicken breast cooked for 7 min. While the chicken is cooking get the sour cream and hot sauce; mix to desired taste. I don’t like too much spicyness, so I mix 1 tablespoon to 5 drops of hot sauce. It will be the best hot sauce/sour cream of your life! Stick your sour cream in the refrigerator until the meal is ready. By now your chicken should be done. Let it cool for a min before you chop it into squares; unless you can handle the extra hot chicken. 😉 Place a piece of tin foil on a cookie sheet and lightly spray with the cooking oil. Put one tortilla on the cookie sheet and smother with the warmed refried beans. Sprinkle a light layer of cheese on top of the beans, then place your chopped grilled chicken and add another light layer of beans and cheese. Top your mountain of deliciousness with another tortillas and lightly spray with the cooking spray. For a nice touch, sprinkle some cheese on top… can you tell I love my cheese! 😀 Put the cookie pan into the oven for 5 minutes or until golden brown and melty. I slide my creation onto a large plate and cut into fours using a pizza cutter. Add the sour cream for dipping and whoola… chicken taco pizza!
